L28 Culinary Platform is a restaurant, an accelerator for innovative chef entrepreneurs, and an incubator for new and creative interpretations of Israeli cuisine. Named after its address on 28 Lilienblum Street, L28 is at the heart of Tel Aviv’s booming startup ecosystem. It serves a vibrant, fresh, and locally sourced Israeli menu, cooked by up-and-coming chefs who are given a six-month residency and a full-stack support package, including expert kitchen crew, a top-flight restaurant manager, marketing, and close mentoring by some of Israel’s leading restaurateurs. Guided by a Culinary Director, the chefs can use the platform to create new dishes and dining experiences, form partnerships with Israel’s culinary innovation ecosystem, and engage a global community of foodies hungry for Israeli culinary innovation. Every six months a new chef comes in, and so L28 is constantly iterating, pivoting by design twice a year, always exploring new interpretations and creations.

This platform is brought to you by Start-Up Nation Central, an NGO that strengthens Israel’s innovation ecosystem and serves as its gateway to the world. We’ve taken the basic ingredients of Israeli entrepreneurship –perpetual hustle, high-stakes risk-taking, quick recovery from failure, compulsory reinvention–and coded them into our culinary platform’s design. Together with our chefs, we’re here to explore Israeli culinary innovation and ask questions: What is Israeli cuisine? Is there even such a thing? What can Israeli food offer the worl דd? How can it bring people together?

Through food we’re aiming to add new threads into the tapestry of Israel’s vibrant society and bring people together all over the world.

NOW COOKING : CHEF GABRIEL ISRAEL

Gabriel is an artist and creator in the full sense of the word. Colors and textures are an inseparable part of his life. Gabriel grew up in a house that lived and breathed hospitality and skilled cooking, and from a young age he absorbed the secrets of the profession. His philosophy is to break boundaries and create a new culinary language. Later, Gabriel discovered his love for art through painting and graffiti, sculpture and tattoos – as reflected in the colorful and special menu he created for you.

After several years working in leading restaurants in New York and leaving a mark on the international restaurant industry, Gabriel returned home to explore new Israeli cuisine and the Israeli kitchen in which it is made. It’s a kitchen that represents and welcomes the travels and tastes of a cosmopolitan, vibrant culture, and weaves them back into the unique roots and authenticity of Israeli food.
